Since PackageKit knows what kernels are being updated before it actually
does the update, it would be possible for it to unpin all but the actual
running kernel before doing the update, this would make sure that you
always have 2 kernels available, the running kernel at time of last
update (which we can assume is good since it was running enough to
actually update) and the newest kernel in the group.  Just a thought.
